Italian Spinach Tomato & Orzo Soup (Vegan)

Ingredients
2 Cups of diced Onions
1 1/2 Cups of sliced Carrots
1 Cup Celery Sliced
9 cloves of garlic
32 ounces of Vegetable stock
2 (14.5 oz) cans Fire Roasted tomatoes
1 1/4 cups Wheat Orzo
1 teaspoon Italian seasoning
1 teaspoon Basil
1/2 teaspoon oregano
Salt and Pepper to taste
Olive Oil mister
3 cups packed Baby Spinach
Directions
- Mist spray pan with olive oil medium heat
- Sauté Onions 6 minutes until soft.
- Add carrots, celery and continue to sauté for 5 minutes. Add garlic for the last 1 minute.
- Add Stock Tomatoes Seasoningg orzo stir and continue to cook over medium heat unit Orzo is al-dente 15 minutes.
- Add Baby Spinach and season to taste salt and pepper
