Moist Zucchini Muffins

Ingredients
3 eggs
2 cups granulated sugar
1 cup canola oil
1 tsp vanilla
1 tsp salt
1 tsp cinnamon, I used a rounded teaspoon
1 tsp baking soda
1 tsp baking powder
3 cups all-purpose flour
1 cup chopped ground pecans
1 lb. grated zucchinis, 3 cups press grated zucchinis, 3 medium zucchinis
Directions
- Preheat oven to 350 degrees
- In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In a stand mixer fit with the paddle attachment, beat together the oil and sugar until combined, about 2 minutes. Add the eggs in one at a time, beating until light and fluffy. Add the vanilla extract and mix well.
- Add the flour blend ingredients 4 different additions, making sure you end with the flour. Do not over mix.
- Add the grated zucchini once zucchini is incorporated then add the nuts.
- Place in the muffin tin cupcake liners. Using a scoop, fill the muffin liners 2/3 full. Bake for 20 to 26 minutes or until a toothpick inserted into the center of the muffins comes out clean.
- Let the muffins cool for 5 minutes in the pan, then transfer them to a wire cooling rack to cool completely.
