Alterative options for Dairy-Free, Vegan
Simply make these muffins dairy-free by replacing the not only milk with a milk substitute include replacing butter with a non-dairy substitute.
Need it vegan or egg-free? This recipe needs 2 eggs, use the flaxseed egg recipe for 2 eggs. In addition, make the recipe vegan by adding a vegan-egg to the dairy-free recipe.

Vegan Flaxseed-Egg Recipe is a simple mix. For 1 egg mix 1 tablespoon ground flaxseed with 3 tablespoons of water. Let the mix rest a few minutes before adding.

Gluten Free Oat Bran Muffins

Ingredients
2 cups Gluten Free Flour, Donna Joy’s GF Flour recipe, Bob’s Redmill or other w/ Xathan Gum
3/4 cup Oat Bran
1/4 Cup Sugar, granulated
3/4 tsp baking soda
1 tsp salt
1 cup raisins or alterative
1 cup buttermilk or alternative milk product
1/3 cup honey or alternative such as agave
1/2 cup melted butter or alternative butter product
2 eggs or two egg substitutes
Directions
- Preheat oven to 350 degrees.
- Whisk all the dry ingredients except raisins in a medium bowl.
- Whisk together in a separate bowl all the wet ingredients.
- Combine the wet ingredients together with the dry ingredients. Add the raisins or other toppings and stir.
- Place in the muffin tin cupcake liners. Using a scoop, fill the muffin liners 2/3 full. Bake for 20 to 26 minutes or until a toothpick inserted into the center of the muffins comes out clean.
- Let the muffins cool for 5 minutes in the pan, then transfer them to a wire cooling rack to cool completely.
