Delicious Hearty Healthy Vegetable Lentil Loaf

Ingredients
1/2 cup dry lentils (use green/brown)
11/4 cups vegetable broth
1/2 cup oats
1/4 cup oat flour
1.5 tablespoons flaxseed meal (ground flaxseeds)
2 tablespoons & 2 teaspoons water
2 tablespoons olive oil
3 garlic cloves, minced
1/2 medium onion, finely diced
1/2 small red bell pepper, finely diced
1/2 carrot, finely diced or grated
1/2 celery rib, finely diced
1/4 cup dried onions
4 tablespoons tomato paste
1/2 teaspoon dried italian seasoning
1/2 teaspoon EACH garlic powder & onion powder
seasoned salt & pepper to taste
Directions
- Prepare lentils: Rinse the lentils. In a pot add 1.25 cups water/broth with lentils. Bring to a boil, reduce heat, cover and simmer for about 40 minutes, stirring occasionally.
- Preheat oven to 350 degrees.
- Prepare Flax egg: In a small bowl, combine 1.5 tablespoons flaxseed meal (ground flaxseeds) and
2 tablespoons & 2 teaspoons water. - Sauté vegetables and spices: In a sauté pan heat oil and sauté carrots for 2-3 minutes, add onions, celery bell pepper, garlic and continue cooking for 5-7 minutes. Add the tomato paste, dried onions, spices and simmer for 3-5 minutes, if the tomato paste makes the mixture too thick add water to thin it out. The tomato paste should blossom.
- Mash the lentils: Place the lentils in a large 3 or 4 cup measuring cup. Using a handheld mixture use one beater and beat the lentils until almost mushy. Add the oats and continue to beat, adding the oat flour to mix.
- Combine & form loaf: combine the sautéed veggies, lentil mixture and flax egg mixture. Shape into a loaf. The loaf will hold it shape. Place in a lined baking dish.
- Bake: bake for 45 minutes.
