Gluten Free Pancake Recipe

If you used Donna Joy’s® Gluten Free Pancake Mix this is the same formula.

Ingredients
1 cup Rice Flour
3 Tbsp Tapioca Flour
1/3 cup potato starch
1 1/2 Tbsp Baking Powder
1 tsp Sugar
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 Xathan Gum
2 Eggs
3 Tbsp Canola Oil
2 cups Buttercream or Milk or milk substitute
Directions
- In a bowl, mix or sift together all the dry ingredients.
- Stir in eggs, water, and oil until well blended.
- Heat a large, well-oiled skillet or griddle over medium-high heat. Spoon batter onto skillet and cook until bubbles begin to form. Flip and continue cooking until golden brown on bottom.
- Serve with your choice of toppings.
