Easy to customize. Sautéed Sliced Zucchini goes really well when added to the soup.

Ingredients

  • 2 Cups of diced Onions

  • 1 1/2 Cups of sliced Carrots

  • 1 Cup Celery Sliced

  • 9 cloves of garlic

  • 32 ounces of Vegetable stock

  • 2 (14.5 oz) cans Fire Roasted tomatoes

  • 1 1/4 cups Wheat Orzo

  • 1 teaspoon Italian seasoning

  • 1 teaspoon Basil

  • 1/2 teaspoon oregano

  • Salt and Pepper to taste

  • Olive Oil mister

  • 3 cups packed Baby Spinach

Directions

  • Mist spray pan with olive oil medium heat
  • Sauté Onions 6 minutes until soft.
  • Add carrots, celery and continue to sauté for 5 minutes. Add garlic for the last 1 minute.
  • Add Stock Tomatoes Seasoningg orzo stir and continue to cook over medium heat unit Orzo is al-dente 15 minutes.
  • Add Baby Spinach and season to taste salt and pepper
