4 oz organic Wheat Orzo
1 Tablespoon Olive Oil
8 oz Brown Mushrooms, sliced
4 large cloves of Garlic, minced
5 cups baby Spinach
Salt & Pepper, to taste
1/4 cup grated Cheese of choice Parmesan, Romano Vegan or regular
Directions
- Boil water and cook Orzo according to the package. Drain and rinse. set aside
- In a large skillet, heat olive oil over medium heat. Add Mushrooms and cook until lightly brown. 7- 10 minutes.
- Add the minced garlic and continue to cook 2-5 minutes
- Add the baby spinach until wilted.
- Add the orzo and combine.
- Sprinkle with cheese of choice. Season with Salt and Pepper,
