Ingredients

  • 4 oz organic Wheat Orzo

  • 1 Tablespoon Olive Oil

  • 8 oz Brown Mushrooms, sliced

  • 4 large cloves of Garlic, minced

  • 5 cups baby Spinach

  • Salt & Pepper, to taste

  • 1/4 cup grated Cheese of choice Parmesan, Romano Vegan or regular

Directions

  • Boil water and cook Orzo according to the package. Drain and rinse. set aside
  • In a large skillet, heat olive oil over medium heat. Add Mushrooms and cook until lightly brown. 7- 10 minutes.
  • Add the minced garlic and continue to cook 2-5 minutes
  • Add the baby spinach until wilted.
  • Add the orzo and combine.
  • Sprinkle with cheese of choice. Season with Salt and Pepper,
