1 tsp Olive Oil
1 yellow onion, Chopped
4 Garlic cloves, Chopped
2 Carrots, Chopped
2 Stalks of Celery, Chopped
1 can Black Beans, rinsed & drained
1 can pure Pumpkin
1 – 2 cups String Beans (trimmed & cut to size)
1 can (14.5 oz) diced tomatoes
14 oz vegetable broth
2 cups water
2 tsp Cumin
1.5 tsp Thyme
1 tsp Seasoned salt
1 tsp Granulated Garlic
1/8 tsp Cayenne pepper
Directions
- Heat oil in a saucepan over medium heat. Add onions and cook for 4 minutes until softened.
Add carrots & celery and continue cooking for 2 minutes. add garlic and cook for a few minutes until garlic is tender. - Add diced tomatoes, Cut string beans, broth, spices, and water. Cook until carrots are tender approx 10 minutes.
- Add black beans, pumpkin, and bring to a boil.
