Ingredients

  • 1 tsp Olive Oil

  • 1 yellow onion, Chopped

  • 4 Garlic cloves, Chopped

  • 2 Carrots, Chopped

  • 2 Stalks of Celery, Chopped

  • 1 can Black Beans, rinsed & drained

  • 1 can pure Pumpkin

  • 1 – 2 cups String Beans (trimmed & cut to size)

  • 1 can (14.5 oz) diced tomatoes

  • 14 oz vegetable broth

  • 2 cups water

  • 2 tsp Cumin

  • 1.5 tsp Thyme

  • 1 tsp Seasoned salt

  • 1 tsp Granulated Garlic

  • 1/8 tsp Cayenne pepper

Directions

  • Heat oil in a saucepan over medium heat. Add onions and cook for 4 minutes until softened.
    Add carrots & celery and continue cooking for 2 minutes. add garlic and cook for a few minutes until garlic is tender.
  • Add diced tomatoes, Cut string beans, broth, spices, and water. Cook until carrots are tender approx 10 minutes.
  • Add black beans, pumpkin, and bring to a boil.
