Ingredients
2 egg whites or 2 flaxseed-Vegan egg recipe for vegan.
1 cup canola oil
1 cup sugar
2 cup flour
1/2 tsp salt
3 tsp baking powder
1 cup chopped nuts (optional)
3 bananas, mashed a little over 1 cup
1 tsp lemon juice
1 tbsp ground flax seed
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
- Mix sugar, oil, and egg in a large bowl until light and creamy. Stir in bananas and walnuts. Add flour, baking soda, and salt; stir until completely smooth. Spoon batter into the prepared muffin cups, filling each 3/4 full.
- Bake in the preheated oven until tops spring back when lightly pressed, about 25 to 35 minutes.
