Oat Bran Blueberry Muffins Vegan, Dairy Free Recipe

Ingredients
1 cup all-purpose Flour or a Gluten Free Flour
1/2 cup oat flour
1/2 cup whole wheat flour
3/4 cup oat bran
1/4 Cup Sugar, granulated
3/4 tsp baking soda
1 tsp salt
1 cup frozen blueberries
1 cup oat milk
1/3 cup honey or for Vegan use agave syrup
1/2 cup canola oil
2 flaxseed eggs=2 tablespoons ground flaxseed, 6 tablespoon – mix and let rest 5 minutes.
Directions
- Preheat oven to 350 degrees.
- Mix flax egg and set aside
- Whisk all the dry ingredients in a medium bowl.
- Add all the wet ingredients except for blueberries
- Combine the wet ingredients together with the dry ingredients. Place the blueberries in batter while in liner.
- Place in the muffin tin cupcake liners. Using a scoop, fill the muffin liners 2/3 full. Distribute blueberries in liner.
- Bake for 20 to 26 minutes or until a toothpick inserted into the center of the muffins comes out clean.
- Let the muffins cool for 5 minutes in the pan, then transfer them to a wire cooling rack to cool completely.
